Melon stew is one of the most popular of recent trending foods in the world. It’s easy, it’s quick, it tastes yummy. It is enjoyed by millions daily. They are nice and they look fantastic. Melon stew is something that I’ve loved my whole life.

To begin with this particular recipe, we have to prepare a few ingredients. You can have melon stew using 11 ingredients and 4 steps. Here is how you can achieve that.

The ingredients needed to make Melon stew:
  1. Prepare 240 g ground melon (wild melon seeds or pumpkin seeds)
  2. Prepare 400 ml meat stock
  3. Prepare 680 g (about 5 medium tomatoes)
  4. Take 3 fresh chili pepper
  5. Prepare 4 tbs ground crayfish
  6. Take 10 g chicken bouillon
  7. Take 1/2 tsp salt
  8. Get Handful dried bitter leaves (or spinach finely chopped)
  9. Take 4 tbsp olive oil
  10. Make ready 500 ml water
  11. Prepare Millet flour or cornmeal (for serving)

Kontomire stew is a staple in our house. We mostly alternate between garden egg stew and kontomire stew weekly. I am surprised I do not get tired of it. It is part of our taste bud make up and we do not get fed up of it.

Instructions to make Melon stew:
  1. Pause the tomatoes and pepper in a blender until purée. Transfer to a pot on a stove top, cover and allow to cook until the water content is dried off.
  2. Heat up a pot, add oil,the cooked tomatoes and pepper mixture. Fry for about 5 minutes, add melon and continue frying for another 5 minutes, then add the crayfish and fry for 2 minutes.
  3. Add meat stock, water, chicken bouillon, 1/2 tsp salt, stir to combine and bring to a boil.
  4. Reduce heat to low and allow to simmer for 30minutes. Stir in dried bitter leaves (washed and cut into smaller sizes), cover and allow to simmer for additional 5 minutes. Serve with cornmeal or any choice of carb. Voila!

We mostly make kontomire with smoked salmon, my favourite and melon seeds( agushie/akatoa). Adding some tomato makes it really go well with rice and gives the melon stew very bright colour. Even when tomatoes is added, it can still be served with pounded yam made in a food processor or maually or even serevd with any other swallow like eba, semo, amala, elubo, starch etc. Winter melon soup is reputed to be good for weight loss and anti-swelling. It is called 冬瓜 (dong gua) in mandarin and is a fairly big round fruit with dark green skin.
