- Add spices & garlic continue to cook for a few more minutes.
- Pour in tomatoes then fill tin with cold water twice & add to the pan. Stir in the stock cube.
- Scrape skin from the roasted pepper & slice. Add to the pot along with the potato. Cook for about 2 hrs on low heat.
- To finish add olives turn up heat to drive liquid away. Season to taste & serve with chopped coriander.
