  2. Once the jaggery dissolve and tamarind becomes soft and pulpy drain the mixture through drainer.

  4. Pour the watery mixture into the deep pan /kadai and put it on med flame.
  5. Once the boil starts put all the spices and make them boil till it comes at desired consistency.
  6. Once it cool down put it in aur tight container.
  7. You can consume this next 6 months.

Even though this recipe is as simple as mixing jaggery and spices into tamarind puree. Tamarind chutney is sweet and spicy and tart! Strain and transfer to the pan again. Add the tamarind paste and seasoning. Boil till thick enough to coat the back of a spoon thinly.
