  8. Prepare 1/4 teaspoon finely ground Salt *optional

  3. Heat Wakame in a small frying pan over low heat until aromatic. Add Katsuobushi (Bonito Flakes) and Shiso, stir for a few minutes, then remove from heat.
  4. Add Ginger, Soy Sauce, Sugar and Toasted Sesame Seeds, and combine well. You can mix in finely ground Salt for extra saltiness, but it is optional.

You could use this marinade with any kind of blue fish and it also works with chicken. This particular blend contains ume plum, adding a saltiness to the flavour. Use Ume-Shiso sprinkle as a seasoning and shake over salads, rice, noodles, tofu and other meals for an authentic Japanese taste. Homemade furikake is rice seasoning made with leftover kombu and katsuobushi from making dashi. This quintessential Japanese rice seasoning is fabulous on rice of course, but also on onigiri, udon noodles, soup, salad, boiled egg, popcorn, and more!
