The ingredients needed to make Seared Bonito with Garlic:
- Get 200 grams Bonito (sashimi grade)
- Take 1 tsp Salt
- Take 1 as required Pepper
- Get 1 large clove Garlic
- Make ready 2 tbsp Olive oil
- Take 1/12 large onion Sweet onion
- Get 5 leaves Shiso leaves

Katsuo (Bonito) is a seasonal Japanese delicacy of early summer. The most popular way to eat it is as katsuo no tataki ("pounded bonito sashimi"), a traditional dish from Kochi Prefecture on Shikoku Island. (Part of Thanks for the Meal's regional Japanese recipe collection.). This is a unique type of sashimi, the only kind to be eaten with garlic or seared before eating. Bursting with fresh flavours, this simple recipe by Andrea Sarri lets the gorgeous produce shine through.
Steps to make Seared Bonito with Garlic:
- Coat the bonito with salt and pepper.
- Mix the ingredients for the dressing. We will add heated oil later on so it is useful to have a small bottle handy to store!
- Thinly slice the fresh onions, julienne the shiso leaves, and rinse both in water. Drain well, and transfer to a plate. You don't have to use fresh onions!
- Add olive oil to a pan, along with slightly thickly-cut garlic over a low heat.
- Once the garlic is aromatic and browns, remove from heat. If you transfer it to a bowl with paper towel, it will absorb the excess oil and become crisp.
- Place the bonito slab into the pan and flip it after it has cooked about 5 mm from the surface. Remove from the pan after cooking it on the other side. (Make sure not to burn it since it is not rinsed with water).
- Add the remaining oil to the dressing kept in the bottle while it's still hot. Shake it thoroughly. The bottle will become hot, so be careful!
- Slice the bonito into 1 cm portions, and put it on top of the fresh onions and shiso leaves. Sprinkle with the garlic chips and dressing, and you are done.
- You can also make it colorful by adding green onions and tomatoes.
- It tastes great with lots of garlic.
With its firm, dark flesh, the bonito lends itself to being served medium-rare. Rub surface of fish with cut side of garlic. Pass fillet lightly over high open flame one side at a time until red flesh on surface turns white and skin is singed. For the Seared Bonito, sear the bonito skin with a blow torch until it bubbles and crisps. Place fillet into the fridge to completely cool.
