  1. Make ready 1 cup curd
  2. Make ready 1 beetroot medium sized grated
  3. Make ready 1/4 cup grated coconut
  4. Take 1 green chilli
  5. Make ready 1/2 inch ginger
  6. Prepare 1 +1 tsp mustard seeds
  7. Prepare 1 tsp oil
  8. Take Few curry leaves
Instructions to make Beetroot Pachadi:
  1. First in a blender jar add grated coconut, green chilli, ginger, mustard seeds, 1/4 cup of curd and blend well.
  2. Now in a pan add grated beetroot along with little water and saute for a min.
  3. Now add blended coconut curd mixture to the beetroot pan and mix well.
  4. Now add remaining 3/4 cup of curd and stir well. Add salt to taste and cook for a min and then switch off the heat.
  5. Now in a small tempering pan heat oil, add mustard seeds, let them crackle, add curry leaves and pour the tempering to the prepared mixture.
  6. Healthy beetroot pachadi is ready.
