  1. Take 3 cup Basmati rice soaked for 15 minutes
  2. Make ready 3 tbsp +1/4 cup Ghee
  3. Prepare 2 Green Chillies
  4. Get 3 Onions medium sized thinly sliced
  5. Prepare 3 Bay Leaves
  6. Prepare 4 Green Cardamom
  7. Prepare 1 Cinnamon stick large
  8. Take Cloves 4
  9. Make ready 3/4 cup Cashew nut
  10. Get 1/2 cup Golden Raisins
  11. Prepare 2.5 tsp Salt or as preferred
  12. Make ready 3 Cups Water
  13. Get 2 tablespoons Cilantros chopped for garnishing

This recipe is a Malabar special and from the Kerala cuisine. In malayalam 'nei' or 'ney' means ghee and 'choru' means rice. This is the Malabar version of making ghee rice, which is called 'nei choru' in Malayalam. The only variation to my recipe is that I used a cup of milk in addition to water to get a creamier and richer consistency.

Instructions to make Malabar Nei Choru/Ghee rice:
  1. Heat 3 tablespoons ghee in a pot. Fry 3 bay leaves,2 green chillies, Cinnamon large 1 stick, cashews, cloves 4.Add raisins fistful and 4 green cardamoms. Fry gently.
  2. Add 3 cups water to the pot. Allow the water to boil. When the water starts boiling,Add 3 cups pre-soaked, drained basmati / kaima rice. Add salt as required. Stir gently.
  3. Cover and cook. In another pan, heat 1/4 cup ghee, add 3 medium onions thinly sliced, salt. Fry till brown.While rice is cooking,add half of the fried onions +ghee and spread.
  4. Cover and cook for 10 minutes on medium heat. Add fistful cashews and extra raisins to the hot fried onions. - Toss quickly in the heat. Keep aside. Rice is cooked with an amazing aroma.
  5. Add the reserved fried onions, fried cashews, raisins with ghee. Spread.
  6. Toss gently from down to up. Sprinkle chopped corianders. Malabar Nei Choru / Ghee rice is ready to serve. Serve hot with any spicy curries.

But you can make it omitting the milk and just adding water. Ghee Rice or nei chor as it is commonly called is a famous delicacy of south India and is extremely easy to make.
