Pack the finished mincemeat into a sterilized jar (wash in hot, soapy water & dry in a low oven) screw the lid on tight & store it in the fridge until ready to use. You can leave out the walnuts if you prefer & if you don't like mixed peel just buy whichever dried fruit you like. There are no end of uses for a packet of mince!

  1. Place the dried fruit into a large bowl & pour over the brandy. Cover with a tea towel & leave to soak overnight or until all the liquid has gone.
  2. Put the walnuts on a baking tray and & place into the oven (140 Fan/160C/Gas3) for about 10 minutes. Remove from the oven & chop finely.
  3. Add the nuts to the fruit along with all the other ingredients & mix well. Pack the mincemeat into a clean jar & keep in the fridge until ready to use.

And I've come up with something which has everything that I love about a mince pie, and more. What I've got is some pre-bought, all-butter puff pastry, and I've got some filo pastry here as well. Heat canola oil in a large stockpot or Dutch oven over medium heat. Season chicken with salt and pepper, to taste. Sieve the flour, salt, mixed spice and cinnamon into a bowl.
