  1. Get 600 g diced fresh tomatoes (I used a combination of Roterno, Arlinta and Sunstream variety from @ericwalltomatoes)
  2. Take 120 g onions, sliced thinly
  3. Make ready 1 cup white sugar
  4. Prepare 1 cup white vinegar
  5. Take 1/3 cup malt vinegar
  6. Take 1 1/2 tsp mustard powder
  7. Make ready 1 tsp salt
  8. Make ready 250 g can sweetcorn kernels
  9. Take 1 tbsp water
  10. Get 2 tbsp cornflour
Instructions to make Tomato and Corn Relish:
  1. Combine tomatoes, onions, sugar, vinegars, salt and mustard powder in a pan. Bring to a boil, reduce heat and simmer for 1 hour. Stir the mixture occasionally.
  2. Add in the corn and simmer for another 20 mins
  3. Combine the cornflour and water to form a slurry. Add to the corn mixture and bring to a boil. Reduce the heat and allow to simmer till thickened slightly.
  4. Transfer to sterilised jars and allow to cool. Then refrigerate and enjoy!.
