- Get 600 g diced fresh tomatoes (I used a combination of Roterno, Arlinta and Sunstream variety from @ericwalltomatoes)
- Take 120 g onions, sliced thinly
- Make ready 1 cup white sugar
- Prepare 1 cup white vinegar
- Take 1/3 cup malt vinegar
- Take 1 1/2 tsp mustard powder
- Make ready 1 tsp salt
- Make ready 250 g can sweetcorn kernels
- Take 1 tbsp water
- Get 2 tbsp cornflour
Instructions to make Tomato and Corn Relish:
- Combine tomatoes, onions, sugar, vinegars, salt and mustard powder in a pan. Bring to a boil, reduce heat and simmer for 1 hour. Stir the mixture occasionally.
- Add in the corn and simmer for another 20 mins
- Combine the cornflour and water to form a slurry. Add to the corn mixture and bring to a boil. Reduce the heat and allow to simmer till thickened slightly.
- Transfer to sterilised jars and allow to cool. Then refrigerate and enjoy!.
