  1. Take 1 onion, finely chopped
  2. Get 1 medium tomato, finely chopped
  3. Get 1 Thai chilli pepper, finely chopped
  4. Get 1/2 tablespoon ginger+garlic paste
  5. Get 350 grams paneer, cut into cubes
  6. Prepare 1/4 cup green peas
  7. Make ready 1/2 teaspoon turmeric powder
  8. Take 1/2 teaspoon Kashmiri chilli powder
  9. Make ready 1 teaspoon cumin powder
  10. Get 1/4 teaspoon coriander powder
  11. Take 1/4 teaspoon garam masala
  12. Get to taste Salt
  13. Take 2 tablespoons oil or ghee, divided
  14. Get 1 inch cinnamon
  15. Take 2 cardamom pods
  16. Take 2 cloves
  17. Make ready 1/2 teaspoon cumin seeds
  18. Make ready 1 dried red chilli

The combination of peas, tomatoes and paneer gives this dish a subtle sweetness which enhances the taste of this flavored dish. Soft paneer and green peas cooked in onion tomato gravy. Tastes best with roti and rice. Matar paneer has paneer and matar/ green peas as main ingredients.

Steps to make Matar Paneer:
  1. Heat 1 tbsp ghee on medium heat.
  2. Add cumin seeds, cinnamon, cardamom, and cloves. Fry until cumin darkens slightly.
  3. Add green chillies.
  4. Add onions, and fry till golden, add salt to hasten cooking.
  5. Add ginger+garlic, fry for 1 minute.
  6. Add tomatoes and stir. Cover for 2 minutes, or until tomatoes get mashed up.
  7. Add powdered spices - turmeric, Kashmiri chilli, cumin, coriander, garam masala - stir.
  8. Empty this mixture into a blender, and make a thick paste.
  9. Wipe out the pan with a paper towel, add 1/2 tablespoon of ghee or oil. Add 1/4 teaspoon cumin seeds, and a dried red chilli, followed by the gravy base.
  10. Keep stirring until the mixture thickens and starts to slide easily in the pan. Add 250-300 mL hot water. Simmer for 3 minutes.
  11. In another pan, fry paneer cubes till lightly golden. Set aside.
  12. Add blanched peas to gravy, followed by paneer, and stir.
  13. Serve with roti, paratha, or rice.
