Instructions to make Cauliflower Cheese Gratin:
- Preheat oven to 200°C.
- Cut Cauliflower into large florets. Place the Cauliflower and Bay Leaf in a large saucepan or pot, cover with water and add 1 teaspoon Salt, then bring to the boil. Cook for 5 minutes, then drain well. Place cooked Cauliflower in a large ovenproof dish. Discard the Bay Leaf.
- Melt Butter in a saucepan and stir in Flour. Cook for a few minutes over medium low heat. Pour in Milk and bring to the boil, stirring constantly, and simmer until the sauce thickens. Add the Cheese and mix well. Season with Salt & Pepper to taste.
- Pour the sauce over the Cauliflower. Bake for 20 minutes or until golden.
Make sure any excess moisture is drained off and arrange the florets in individual gratin dishes. Try to keep the "flower" side up where possible.
