- Juice a lemon and add 2 teaspoons to the pan (I used the rest as part of a salad dressing so not to waste the rest).
- Add the sugar to the pan.
- Heat the pan on a medium heat and bring to a simmer (bubbles will start to form). This only took 1-2 mins.
- Reduce the heat to the lowest possible and continue to cook for 10 mins, stirring every 2 mins or so.
- Once the strawberries are nice and soft, use the back of a spoon to mulch them down. Continue to do this for 3-5 mins, until the consistency of the coulis is as thick as you like it.
- Remove from the heat. If you want a completely smooth coulis you can sieve it (using a metal sieve so it doesnβt melt). Iβve left mine with some chunks in it. Once cooled, leave in an airtight container - it will easily last for 5 days. It can also be frozen. Enjoy!
