  1. Place the waffles either in an oven or under a grill and cook according to packet instructions. Once cooked through lay them on a wire rack over a lined baking tray. Preheat the grill to a medium heat.
  2. In a bowl combine the jerk seasoning with the baked beans and season with salt and pepper. Stir well to combine.
  3. Spoon over the beans neatly into the waffles then put the grated cheese on top of each one. Grill until golden and bubbly.
  4. Remove from the grill and sprinkle over red chilli flakes to taste. Enjoy!

Drain the soaked beans and rinse well. Bring to a boil, then reduce the heat to medium-low. Please note, I have made this One Pot Jamaican Jerk Chicken, Rice and Beans reasonably mild to ensure it is family friendly (i.e. my kids ate this fine!), but if you like things hotter, then by all means add extra chilli - either into the marinade or sprinkle some fresh chillies over the top afterwards. The spicy jerk seasoning perfectly compliments the sweet pineapple salsa, and the black beans add bulk and extra protein to the meal without adding a lot to the cost. And even better yet, you can serve this meal hot, or eat the leftovers cold for a nice refreshing summer lunch.
