- In another bowl crack the egg and just use the white part in the bowl
- Cut the chicken into thick strips
- Heat up the veg oil until very hot, near to boiling
- Using tongs lift the chicken strip and dip in the egg white
- Then into the breadcrumb mix and drop slowly into the boiling oil. (you can test the heat drop a little of the breadcrumb mix into it if it bubbles fast and the bit floats on top its ready.)1. Just using 4 at a time in the oil and fry for 3 minutes. Then serve either hot or cold.
In a small bowl add egg and coconut milk and whisk until combined. In another small bowl add coconut and Panko bread crumbs, paprika, garlic powder and salt. Mix well; Dip shrimp one at a time into the cornstarch, then egg mixture and them coconut mixture. Place on a baking sheet and repeat until all shrimp are done.
