Jelly, or gelatin, is a dessert made with sweetened or unsweetened collagen from animals. A vegetarian form can be made from seaweed. Dragon fruit, also known as pitahaya or pitaya, is a fruit from a cactus family that is usually found in Southeast Asia, Australia, and the United States.

To begin with this particular recipe, we have to first prepare a few ingredients. You can cook pitaya jelly using 4 ingredients and 5 steps. Here is how you can achieve that.

The ingredients needed to make Pitaya Jelly:
  1. Take 1 and a half red dragon fruit, pureed
  2. Take Sugar as desired (the fruit is sweet already)
  3. Get 350 ml water
  4. Get 1 and a half teaspoon of konyaku jelly powder

Let them rest on room temperature to let the hot heat away. A beautiful looking and easy jam made from red dragon fruit or pitaya fruit. Dragon fruits have either white flesh or pink/deep magenta-coloured flesh, with tiny edible black seeds similar to that of kiwi fruit. The jam that gets ready with this gorgeous fruit has a different texture from other fruit jams.

Instructions to make Pitaya Jelly:
  1. Put the sugar, jelly powder and water in pan. Mix.
  2. Put on the heat. Cook until the sugar dissolves and the mixture is boiling.
  3. Turn off the heat. Put the pitaya inside. Stir to mix.
  4. Put into your favourite moulds. Let them rest on room temperature to let the hot heat away.
  5. Put in the fridge. Enjoy.

It has a jelly like texture and its seeds give an extra crunch. You don't have to use a lot of dragon fruit to make one recipe of dragon fruit jelly. Nice to impress, easy to make. This is my wife's recipe for Dragon Fruit Jelly. And this was an ideal recipe for excellent quality of jelly making.
