While the meatballs are in the oven you can start the sauce by adding the oil to a large sauce pot over medium heat. Cover the meatballs and refrigerate until required. Heat the oil in a stainless steel saucepan. Add the sliced onion and the crushed garlic, toss until coated.

Instructions to make Meatball Sauce:
  1. Heat the olive oil over a medium heat and add the onion, garlic and bay leave. Allow to fry for a couple of minutes.
  2. Add the rest of the ingredients except the cheese. Reduce the heat and simmer gently for 20-25 minutes or until the mixture has reduced and the liquid has thickened.
  3. Allow the mixture to cool enough to place in a blender. Remove the bay leaf and blend until the mixture is smooth. Add the sauce back to the saucepan. (Step 3 can be missed, depends on the child's preference).
  4. Add cooked meatballs to the mixture.
