  1. Take 2 Tbs Olive oil

  11. Take 2 Tomatoes, Chopped
  12. Take 3 Potatoes, Cubed
  13. Prepare 1/2 Red Onion, Finley sliced
  14. Take Corriander leaves for garnish

A wok is the best way to make curry. Mauritian curries, although a direct descendent from India, have their own unique taste. We learned that there was more garlic and maybe less tomatoes in a Mauritian curry. Bring a bit of Mauritius into your house with my tasty Mauritian Chicken Curry.

Instructions to make Mauritian Curry:
  1. Add the Onion, Garlic, Ginger, Chillies, Thyme, Curry leaves and cinnamon stick to a pre heated pan with oil. Fry down ingredients for about 5 minutes until onions are soft.
  2. Add the Curry Powder to a bit of water and create a paste. Add this to the pan and stir in. Keep on a medium low heat and be carefull not to burn the spices.
  3. I like to remove the skin, De bone and clean the chicken up before adding it.
  4. Add the chicken pieces, Chopped tomatoes and potatoes, thoroughly coat with the spices. Add warm water just below the level of the chicken and potatoes.
  5. Cook for around 25 minutes or till the chicken and potatoes are cooked through.
  6. Garnish with Corriander and thinly sliced red onions, Serve with rice or fresh Rotis👌

Delicious and simple to make; cooking from scratch doesn't have to be complicated. Until a few months ago, I used to work in travel. A couple of years ago I was lucky enough to go on a work trip to Mauritius. This is a sprightly curry, fierily orange and warm with cinnamon and nutmeg.
