Instructions to make Nanna’s mixed fruit loaf:
  1. Night before, cover your fruit in cold water and leave them overnight
  2. The next day, pre heat the oven to 180 degrees C (gas mark 4)
  3. Put the water and fruit into a saucepan and bring to the boil
  4. Once boiled, strain off the water
  5. Whilst the fruit is still hot, put the fruit back into the pan and take it off the heat. Add the butter, sugar and mix until melted
  6. Add the eggs, almond essence and flour and mix together
  7. Butter the loaf tin and add a lining at the bottom with wax paper
  8. Add the cake mixture to the tin
  9. Add a few flaked almonds on the top of the mixture
  10. Bake for 30 minutes on 180 degrees Celsius and then lower the heat to 150 for another 30 minutes
  11. Test with a skewer and if it comes out clean, the cake it ready and should be a nice golden brown on top
  12. Enjoy with either hot/cold with/without a thin layer of butter AND a good cup of tea!

Added as a last minute idea, one teaspoon of Demerara sugar sprinkled onto the cake before it is baked takes this cake to another level. The crunchy texture adds an unexpected contrast to the soft, yielding cake without adding. Line a loaf pan with baking paper. Remove from the element and leave to cool. Then add sifted flour, bicarbonate of soda and spices and mix until well combined.
