Ofe Owerri was made popular by an Igbo song that says that he who is not rich does not eat Ofe Owerri LOL. This is because several types of meat and fish are used when preparing Ofe Owerri. But you do not have to break the bank to prepare this delicious soup from Imo State, Nigeria!

To get started with this particular recipe, we have to prepare a few ingredients. You can have ofe owerri using 4 ingredients and 5 steps. Here is how you cook it.

The ingredients needed to make Ofe Owerri:
  1. Make ready Assorted meats, chicken, catfish, offal, stockfish, dried fish,
  2. Make ready 1 bit of uziza, ugu and ukazi leaves to get a handful, seasoning
  3. Take Palm oil, ogili, salt and pepper, cocoyam, water
  4. Get Bulgur wheat in place of semo

Ofe Owerri is a community symbol of the Owerri people of Eastern Nigeria and it's environs. They are so proud of this rich and expensive soup that songs have been rendered about it. To make Ofe Owerri for your guests is a thing of pride, because it represents affluence and you are also judged by the quantity and quality of the ingredients used. Instructions to make Ofe Owerri:
  1. Start by soaking your stockfish for around an hour. After that peel and cook your coco yam until it is very soft; then pound it in a mortar until the paste comes out smooth.
  2. Wash the meat or chicken very well before putting it in a pot; season it to your taste, add a little water and cook till almost soft and edible. Add the stockfish, dry fish. Wash your cat fish with ACV to kill any form of bacteria.
  3. When you have confirmed that your meat is done, you can add your washed cat fish and leave to cook for 4 minutes. Then you can add pepper, crayfish and palm oil.
  4. After about 2 minutes, add coco yam in bits and leave to dissolve. Put shredded leaves, ogili and salt to taste, stir and then leave to simmer for about 5 minutes.
  5. Bring down your pot of nutritious Ofe Owerri because it is ready for consumption. I prefer bulgur wheat as swallow… Enjoy!

Top tip: the quantity of liquid in the pot should be just a bit less than the level of the meat and fish (see the video below). Two different types of vegetables are commonly used for Ofe Owerri, which can be mixture of any of these; Ukazi(okazi)&Ugu, Ora(oha)&Ukazi(okazi) OR Ugu&Oha. I got introduced to Igbo soups by my friend Amaka Akaraiwe from Anambra State. She taught me how to make many Igbo soups and dishes from scratch starting with Ofe Onugbu (bitter leaf soup) and Oha soup, which I make so well now, she would be proud. Ofe Owerri , which is usually prepared with two different vegetables namely Uziza and Ugu or Uziza and Ukazi, is a favourite of the Igbos from Imo State, South-eastern Nigeria.
