My easy kedgeree recipe is just that - easy. This dish melds together the flavours of creamy curried rice with smoky mackerel and sweet spring onions. I think this version is also healthier since I have cut out the butter, reduced the oil and used natural yoghurt to give the creaminess without sacrificing on taste. This Easy Kedgeree Recipe consists of rice, smoked fish, boiled eggs and a touch of spice.

Instructions to make Easy Kedgeree:
  1. Dice the onion, heat the oil in a large pan and fry until soft, 5-10 mins
  2. Add the pepper and curry powder. Cook and stir for 2 minutes.
  3. Throw in the fish chunks, stir in and mix with the onion and pepper mix for a few minutes.
  4. Stir in the rice, breaking it up if there are any lumps. Crumble in the stock cube and add half a cup of water. Cook and regularly stir until the water reduces down.
  5. Meanwhile, boil the eggs for 5 minutes. Then move them to a bowl of cold water for 1 minute. Peel the shell off.
  6. Pile the kedgeree on to a plate, cut the egg in half on top of the rice and serve with green veg and lots of coriander.

I guess because it was cooked for the British is not as spicy as Indians would cook their dishes. However, you can feel free to add more spice if you wish. My family actually enjoys it with little spice. If not serving immediately, tip the kedgeree into a warm dish and dot with a few cubes of butter.
