Once cool, add flour and eggs to the mix and stir thoroughly. Place the mixed fruit and nuts, sugar, margarine, bicarbonate of soda, water and brandy in a large pan and bring to a boil. Take the pan off the heat and allow to cool. Place the fruit cherries, peel, walnuts, sugar, butter or margarine, mixed spice, baking soda and milk in a medium sized saucepan.

Instructions to make Boiled fruit cake:
  1. Place crushed tropical fruit, dried fruit, butter, sugar, vanilla essence and brandy in a saucepan and heat gently until the butter has melted.
  2. Bring mixtures to the boil and then simmer for approx. 5 minutes
  3. Cool
  4. Sift plain flour, self-raising flour and bicarbonate of soda together
  5. Add beaten eggs to cooled fruit mixture. Stir gently.
  6. Add dry flour mixture and stir.
  7. Place mixture in a prepared 20cm round cake tin. Sprinkle with sugar for a crunchy top (optional).
  8. Bake 180C for approx 1.5 hours. Skewer test the middle after 1 hour 15 minutes to check if the cake is cooked or needs a little longer. Cool slightly then turn out onto a wire rack to cool fully.

Let mixture cool to body temperature. Place all ingredients except flour and eggs into a pan. Melt butter over low heat with brown sugar, golden syrup, mixed fruit, cinnamon, nutmeg and rum. Turn off heat, add bicarbonate soda and mix thoroughly. When mixture is cold, add flour and eggs, mixing well.
