  1. Make ready 400 g (about 2 medium) cooking apples, peeled, cored & chopped
  2. Prepare 150 unsalted butter or baking fat
  3. Make ready 150 g soft brown sugar

  5. Get 2 tbsp Golden Syrup
  6. Take 200 g self raising flour
  7. Take 2 tsp ground ginger
Instructions to make Apple & Ginger Cake:
  1. Pre-heat the oven to 180C/Fan 160/Gas 4 - Grease & line a 20cm cake tin with baking paper.
  2. Beat the butter & sugar together until light & fluffy then mix in the eggs one at a time. Beat in the syrup.
  3. Sift in the flour & ginger & fold in to the mixture then fold in the apple.
  4. Pour the mixture into the prepared tin & bake for 1 hour 20 minutes. Check with a skewer or tip of a knife, if it comes out clean it is ready.
  5. Allow to cool in the tin for 10 minutes then place on a wire rack to finish cooling.
