If making the sausage meat stuffing, melt the butter and fry the onion as above, then add the sausage meat, apple and herbs. Stir the remaining ingredients into the pan and mix well. Allow to cool completely if you are. Put all the ingredients except the bacon and sage leaves in a bowl. Either roll into balls or spread out evenly in a greased ovenproof dish.
