Bitter gourd is the main ingredient of this dish and the other vegetables in this recipe are pumpkin, plantain, sweet potato, ridge gourd, drumsticks, eggplant and raw papaya. Dried lentil dumplings (badi) is also a important ingredients for making sukto. Sukto is a traditional Bengali recipe. It is also popular in Bangladesh.

Steps to make Sukto:
  1. Heat oil and fry the lentil dumplings and remove
  2. Now add the bitter gourd sliced and saute well adding salt and turmeric powder and remove it crisp and brown
  3. Now add oil and fry the brinjals and keep aside
  4. Add rest of the veggies and saute well adding salt and turmeric powder
  5. Cover it adding warm water
  6. Add the gourd slices,Brinjal and dumplings
  7. Add mustard paste and sugar mix well and switch off
  8. It is time for serving

It goes best with steamed rice. Traditionally this is taken at the start of the main meal. The vegetables used to prepare sukto is available throughout the year. Sukto is a traditional Bengali dish made many vegetables & at least one bitter vegetable with a pinch of sugar to adjust the bitterness. Without this typical Bengali menu is just incomplete.
