For this chutney, start with an onion, Granny Smith apple and fresh figs, which naturally have a jammy quality to them. Crystallized ginger adds a spicy sweet bite, while whole grain Dijon mustard and balsamic vinegar add tangy notes. Sweat the onion: Heat the tablespoon of oil in a medium sized saucepan over medium-high heat.

The ingredients needed to make Fig and mustard chutney:
- Get 3 figs
- Take 3 tbsp brown sugar
- Take 1/2 tbsp+ 1 tsp apple cider vinegar
- Take 1/2 tbsp+ 1 tsp yellow mustard powder
- Make ready 1 tsp yellow mustard seeds
- Make ready 11/2 tbsp water
- Get 1/2 tbsp lemon juice
- Make ready 1/2 tsp black pepper powder
- Prepare to taste Salt
Add the mustard seeds, coriander and grated ginger. Bring the mixture up to the boil over a medium high heat, stirring all the while. For the spicy fig and plum chutney, start by heating the oil and sauté the shallot until softened. Add the mustard seeds, coriander and grated ginger.
Instructions to make Fig and mustard chutney:
- Wash and roughly chop figs.
- Grind them with water to a paste.
- Mix together brown sugar and apple cider vinegar.
- Put this sugar and vinegar mix Cooksnap and a thick bottomed vessel and cook till sugar melts. Switch off flame. Now add the pureed figs. Then add mustard powder and mustard seeds. Mix well.
- Switch on the flame, add salt, sugar, pepper and lemon juice. Cook for 5 minutes.
- Once done let it cool and pour in a glass bottle and keep in the fridge. This can be stored upto 10 to 15 days. Enjoy! :)
