  12. Take As needed oil

Bitter gourd is the main ingredient of this dish and the other vegetables in this recipe are pumpkin, plantain, sweet potato, ridge gourd, drumsticks, eggplant and raw papaya. Dried lentil dumplings (badi) is also a important ingredients for making sukto. Sukto is a traditional Bengali recipe. It is also popular in Bangladesh.

Instructions to make Sukto:
  1. Heat oil and fry the dumplings well keep aside
  2. Now fry the brinjals and keep aside
  3. Now add more oil and temper celery seeds and red chilli
  4. Add gourd slices and saute well adding salt and turmeric powder
  5. Add rest of the vegetables and saute well
  6. Now cover it till it is soft
  7. Add lentil dumplings and brinjals
  8. Add sugar and mustard seeds and poppy seeds paste
  9. Mix well and switch off

It goes best with steamed rice. Traditionally this is taken at the start of the main meal. The vegetables used to prepare sukto is available throughout the year. Sukto is a traditional Bengali dish made many vegetables & at least one bitter vegetable with a pinch of sugar to adjust the bitterness. Without this typical Bengali menu is just incomplete.
