There were chestnuts and mushrooms which are everywhere at the moment, as well as a tasty combination of items, some of which I added as I found the original recipe a little too much on the sweet side. Bind together with the beaten egg and season with salt and pepper. Once the onion has softened, add the chestnuts, chopped tomatoes, breadcrumbs, celery, mushrooms and sage. Season the meat with salt and pepper, then add the cooled mushroom mix, cooled breadcrumbs, cheeses and egg yolks and mix to combine. There's a lotta love in this lentil loaf.

Instructions to make Chestnut and Mushroom loaf:
  1. Cook onion on medium heat for 2 minutes, then add mushrooms and garlic and cook for another few minutes until onions are soft and translucent and mushrooms are cooked
  2. To the food processor add half of chestnuts, chopped kale, chopped herbs, mushroom and onion mix, breadcrumbs, egg, salt and pepper, chilli flakes. Blend until combined. Add the rest of chestnuts and just pulse a little so they stay a bit chunky
  3. Add more breadcrumbs if necessary so the mixture isn't too wet
  4. Bake at 180°C for about 1 hour

Oh and there is no real chopping involved- everything get blitzed in the food processor or mini chopper. Using a table knife, go around the sides and edges of the loaf pan to loosen the loaf and carefully invert onto a serving platter. My recipe for this nut roast very closely resembles a chestnut mushroom stuffing. You can certainly get creative and use your favorite ingredients here. Onion, celery, leek, mushrooms, chestnuts, walnuts, a little white wine, vegetable broth and of course, seasoned cubes of bread.
