Bitter gourd is the main ingredient of this dish and the other vegetables in this recipe are pumpkin, plantain, sweet potato, ridge gourd, drumsticks, eggplant and raw papaya. Dried lentil dumplings (badi) is also a important ingredients for making sukto. Sukto is a traditional Bengali recipe. It is also popular in Bangladesh.

Steps to make Sukto:
  1. Heat oil in a pan add bitter gourd sliced and saute well adding salt and turmeric powder till it is crisp
  2. Remove it and keep aside
  3. Fry brinjal sliced and keep aside
  4. Now add oil and temper celery seeds and red chilli.
  5. Now add the dumplings well keep aside
  6. Add rest of the vegetables and saute well adding salt and turmeric powder
  7. Add water and simmer till the veggies get cooked well
  8. Add bitter gourd sliced,brinjal and dumplings and mustard- poppy seeds paste
  9. Mix well adding sugar

It goes best with steamed rice. Traditionally this is taken at the start of the main meal. The vegetables used to prepare sukto is available throughout the year. Sukto is a traditional Bengali dish made many vegetables & at least one bitter vegetable with a pinch of sugar to adjust the bitterness. Without this typical Bengali menu is just incomplete.
