In order to compensate for the lack of malty goodness from this loaf, I decided to bring back my old pals Cardamom and Mixed spice, to give this loaf an even.

  1. Get 220 g luxury dried mixed fruit
  2. Take 40 g butter
  3. Make ready 145 ml water
  4. Make ready 175 g self raising flour
  5. Get 1/4 tsp Bicarbonate of Soda
  6. Get 5 cardamom pods, de-seeded and crushed
  7. Make ready 1 tsp Mixed Spice

  10. Prepare 110 g dark muscavado sugar
  11. Take Half a cooking apple, cored and sliced

Perfect alongside a piping hot cup of coffee or tea. Serve with a pat of butter, and never go back to your regular loaf recipes! Combine all the fruits in a bowl and pour over the hot tea. Sift the flour, ras-el-hanout and salt together in a large bowl, then add the brown sugar.

Instructions to make Fragrant Spiced Tea Loaf:
  1. Preheat the oven to 160C fan. Grease and line with parchment paper a 1lb loaf tin.
  2. Put the mixed dried fruit, butter and water into a pan. Bring to a boil and simmer for 5-10 minutes.Remove from the heat and set aside to cool a little.
  3. Cream together the egg and sugar for 10 minutes until paler in colour using a beater. Add the cardamom and mixed spice
  4. Sift the flour, bicarb of soda and salt into a separate bowl.
  5. Add half of the flour mixture into the egg/sugar mixture and mix gently, followed by half of the warm fruit mixture. Add the remaining half of the flour mixture followed by the remaining half of the fruit mixture until all incorporated. Mix gently as you go.
  6. Pour the batter into the prepared loaf tin. Pop the apple slices on top and push down into the batter slightly so they are nestled nicely. Bake for 35-45 minutes or until a skewer inserted comes out clean. Leave in the tin for 20 minutes, then turn out not a wire rack to cool.
