- Mix all the ingredients except the milk alternative and vinegar in a large bowl.
- Add the vinegar to the milk alternative and stir in gently. Then add to the dry mix.
- Mix together thoroughly then leave for 5-10minutes for the chia seeds to work their magic.
- Cook small (10cm) cakes in a lightly oiled nonstick frying pan.
- Flip when bubbles appear through the centre and cook for another minute or two on the other side.
- Enjoy with fresh fruit and (my preference) a non-dairy yoghurt.
