In a separate bowl, mix milk, eggs, oil and chia seeds. Spray a medium skillet with cooking spray, being sure to cover the entire surface. Heat the skillet over medium-low heat. Using soymilk or a protein-fortified milk alternative would also increase the protein content of the pancakes.

  1. Mix all the ingredients except the milk alternative and vinegar in a large bowl.
  2. Add the vinegar to the milk alternative and stir in gently. Then add to the dry mix.
  3. Mix together thoroughly then leave for 5-10minutes for the chia seeds to work their magic.
  4. Cook small (10cm) cakes in a lightly oiled nonstick frying pan.
  5. Flip when bubbles appear through the centre and cook for another minute or two on the other side.
  6. Enjoy with fresh fruit and (my preference) a non-dairy yoghurt.
