- Get 1/2 tsp black pepper
- Take 720 ml vegetable or chicken stock
Now lay the butterflied duck breast on top and again, oil, season and cover with stuffing. Place the chicken thigh on top of that and oil and season it. Add the chopped cornbread, sprinkle with ¼ teaspoon salt, and stir to combine. Add the stock, stirring to allow the cornbread to absorb the liquid.

- Meanwhile, heat the oil in a frying pan over a medium heat and fry off the onion and leek until tender, about 5 minutes
- Add in the garlic and keep it moving so it doesn't burn for 2 minutes more, then take the pan off the heat
