The ingredients needed to make Basied Chicken Feet:
  1. Make ready 500 gm - 600gm chicken feet
  2. Get 1 tpbs soya sauce
  3. Make ready 1 1/2 tpbs dark sauce
  4. Get 1/2 tps spice powder
  5. Get 1 tps sesame oil
  6. Make ready 1/2 tpbs oyster sauce
  7. Get Ginger (sliced)
  8. Prepare Garlic (chopped)
  9. Prepare 400 ml - 600ml water

Soak in water for half an hour. Alternately you can purchase prefried chicken feet. Add spice (A) and continue to fry until fragrant. The chicken feet are deep fried then simmered in a flavorful sauce until the skins are soft and the meat tender or chewy.

Steps to make Basied Chicken Feet:
  1. Put chicken feet in pot to boil (15min) to wash off and soften the skins. Rise off and put aside
  2. Add oil to pot or pan, add in garlic and ginger to stir fry, add in chicken feet and stir fry.
  3. Add in soya sauce, dark sauce, osyter sauce, spice powder, sesame oil and stir well for 3min until the feets has the marination on it.
  4. Add in water, stir well and cover with lid to boil for 1hr - 2hr low heat under fire or transfer to slow cook pot (3hr -4hr) in between stir well (ready to served)

The sauce flavored with oyster sauce, sugar and fermented beans. Pour the chicken feet and the clean water just enough to cover the chicken feet in a wok and cook until boiling. Add ginger, light soy sauce, dark soy sauce, and cooking wine in the wok and mix well. Add arise, fragrant leaves, cinnamon, Sichuan peppercorns, rock sugar, and the thirteen kinds of spices in the wok. Then they're braised to infuse flavour and achieve a succulent texture.
