The ingredients needed to make Tomato Fish Stew:
  1. Get 2 small onions finely chopped
  2. Get 1 carrot cubed
  3. Prepare 1 tblsp Mixed herbs
  4. Take 1 habanero chilli
  5. Take 4 garlic cloves minced
  6. Make ready 1 tsp ginger minced
  7. Take 750 g tomatoes
  8. Get 5 fish fillets
  9. Get 3 tblsp parsley chopped

Add the tomatoes, vegetable broth, raisins, and capers. Pat the fish dry and season lightly with salt and pepper. Insert the fish pieces into the cooking liquid, and give everything a gentle stir so that the fish pieces are nicely covered in the cooking liquid. Cook, stirring, until the onion is tender, about five minutes.

Instructions to make Tomato Fish Stew:
  1. On medium heat fry onion, carrots and mixed herbs for 5 minutes. Add habanero chilli. Mince garlic and ginger in mortar and pestle and add to onions and cook till fragrant.
  2. Add slightly blended tomatoes bring to boil and simmer for 15 minutes till the ingredients have married and reduced. Place fish skin side down, cover and simmer for 5-10 minutes depending on thickness of the fillets.
  3. Once cooked, remove from heat, season with salt and pepper, add parsley and serve hot.

Add the pureed garlic and anchovy. Cook, stirring, until the mixture is very fragrant, about one minute, and then add the tomatoes. Add tomatoes and garlic and fry. Ladle into bowls and serve with a spoon. Fish Stew - tasty white fish stew oozing with rich tomato sauce and earthy flavors.
