This is how we make it in our restaurant. Kottu Roti is one of the Famous street food dishes in Sri Lanka. Kottu (also known as kottu roti or alternatively spelled kothu roti (Tamil: கொத்து ரொட்டி; Sinhala: කොත්තු රොටි) meaning chopped roti) is a Sri Lankan dish made from godhamba roti.

  2. Get 1 big onion
  3. Make ready 2 Green chillies

  6. Make ready 2 small cinnamon sticks
  7. Make ready 1/4 tsp Garam masala
  8. Make ready 2 tsps Red chilli powder

  10. Get 1/4 cup water
  11. Get 1/2 tsp Salt
  12. Make ready 1 tsp Oil

This is a recipe that uses leftover paratha and turn it into a awesome recipe. I have a version of egg kothu parota in my blog, check it out here. And also if you want the recipe for parota, you can check it. But I used chapathi instead of paratha, but still the taste was superb.

Steps to make Kottu Paratha:
  1. Chop chapattis into smaller pieces using a knife / kitchen scissor. Set aside.
  2. Now to make the kothu chapati, place a kadai on flame and pour oil into it.
  3. After it heats up add fennel seeds, cinnamon stick, curry leaves, chopped green chillies, onions and sauté on low flame until onion seems half cooked.
  4. Then add chopped tomatoes and coriander leaves. Sauté till its half cooked.
  5. Do not cook tomatoes for long as it will turn mushy.
  6. Add red chilli powder, salt, cumin powder, garam masala and mix well. When raw smell leaves, pour some water.
  7. Then add the chopped chapati pieces into it and stir well.
  8. Cook until the chapati takes in the water completely and the dish seems dry.
  9. When it gets mixed up well remove from flame and serve with onion raita.

Kalakuringa ponga… You made it finally…Thats our mam…I saw many requests for chilli paratha so this weekend I wanted to. Our Punjabi friend told us about this idea of adding enough flour into leftover dal to make a soft paratha dough and rolling it out into parathas. Kottu Roti is a similar preparation from Sri Lanka. Vegetable kottu roti is traditional Sri Lankan street food. Mix eggs and paratha into the vegetable mixture.
