  7. Rub ribs with spice rub. You can put them on the grill right away or wrap in plastic wrap and refrigerate overnight.
  8. On your gas grill, put wood chips over medium-low heat on one side of the grill. Close the lid and wait for smoke.
  9. Once you have smoke, put your mop Sauce on the grills warming rack.  You may need to dilute with water so it doesn't boil away. Place the ribs on the other side of the grill over no heat.
  10. Allow to smoke/cook for 3 hours.
  11. Lift the lid and light your other burners. Turn everything up to medium-high. Remove smoke try and mop sauce.
  12. Grill ribs for about 10 minutes mopping each side a few times. Remove from heat and allow to rest for 10 minutes.
  13. Serve with slaw and enjoy!
