Kadhi Pakori Recipe: Kadhi is a popular north Indian dish, made with besan and yogurt as main ingredients along with various spices with gram flour pakodas dipped in it. My husband makes the khichdi, I make the kadhi. The first time I made this recipe, hubby was a little skeptical about the turmeric and cilantro, but I followed the recipe as written. Asafoetida can be used in two ways, either cooked in oil or ghee or dissolved in water to flavor sambars and kadhi.
Instructions to make Asafoetida Kadhi:
- In pan mix curd, buttermilk and water whisk well. Add chickpeas flour and mix well.
- Now add chilli paste, ginger paste & salt.
- Give boil on medium to low flame meanwhile keep stirring occasionally. Heat oil in pan add red chilli, asafoetida & coriander leaves temper quickly to kadhi mix and switch off flame.
How to Store • Store asafoetida in an air-tight container as it has a pungent smell that can fill your cupboard! Believe me, try once kadhi-rice-bean curry combination as a meal, you will love it. This can be served with moong dal khichdi or vegetable khichdi. (as shown in below pic). It is a very light dinner. In Gujarat, almost every household makes this khichadi-kadhi at least once a week.
