The ingredients needed to make Beef Casserole:
  1. Prepare 1 tbsp vegetable oil or olive oil
  2. Take 40 g salted butter

  17. Get 1/2 tsp dried oregano
  18. Get 1/2 tsp dried thyme
  19. Make ready 1 tbsp Worcestershire sauce
  20. Prepare 2 small red chilli's (optional)
Steps to make Beef Casserole:
  1. In a large pot heat the olive oil and half of the butter over a high heat. When hot brown the beef in batches for approximately 5 minutes. Using a slotted spoon remove the beef when its browned and set aside.
  2. Over a low heat melt the rest of the butter in the same pot. Add the celery, potatoes, carrots, onions, garlic and bay leaves. Cook stirring for 5 minutes until the onions have softened.
  3. Add the flour and tomato puree. Stir and cook for 5 minutes. Increase the heat and return the beef to the pot along with its juices. Add the wine and cook for two minutes or until the sauce has thickened.
  4. Reduce the heat to medium to low. Add the beef stock, chilli, oregano, thyme Worcestershire sauce and chopped tomatoes. Stir and season to taste. Cover and simmer for 1 1/2 hour - 1 3/4 Hour. Remove the lid for the last 30-40 minutes, stirring occasionally, until the beef is tender and the sauce has thickened. Lastly stir in the parsley. Check seasoning is to your taste. Serve over mash potatoes/vegetables or have it as it is.
