- Prepare 1 . Oil- 1 tbsp

This Kadamba Chutney can be prepared with different combinations using ingredients like tomato, onion, garlic, ginger, coriander leaves, curry leaves, mint leaves, coconut, dhals etc. Basic ingredients for the chutney are Chillies, tamarind and salt (உப்பு, புளி, மிளகாய்). Instructions to make Kadhamba chutney:

- Heat 1tbsp of oil in kadai add urad dal,channa dal, saute until dal change to light brown.
- Add red chilli, green chilli, hing. Saute for 20 seconds. Add chopped onion, tomato and ginger. Saute until tomato turns mushy. Add salt.
- Now add curry leaves, mint and coriander. Finally add grated coconut saute for minute and let it cool.
- When you grind the chutney add tamarind and grind to paste. Transfer this to bowl.
- Heat a tsp of oil in small kadai add mustard, cumin, curry leaves and red chili. Once mustard and cumin seeds splutter pour this over chutney and serve with idli or dosa.
All the vegetables are chopped and kept ready below. In the picture below, you find peeled potatoes in the center, then brinjal, cluster beans, ash gourd, pumpkin, broad beans, chow chow and curry leaves.
