  18. Make ready 1 tbsp fresh cream

Instructions to make Kolhapuri Chicken:
  1. Marinate chicken with little salt,lemon juice, curd and 1tsp red chilli powder.Dry roast scraped coconut and sesame and poppy seeds till a nice aroma comes.Dry roast 2 tomatoes and red chillies in direct flame.Fry half of chopped onion and add to the roasted masala.Make a paste of all alongwith fresh cream.

Heat oil in a wok, and add half crushed whole garam masala.When they splutter,add rest of chopped onion and fry.Then add the ground paste,ginger garlic paste and toss.Then add the marinated chicken alongwith the marinade.Add turmeric and red chilli powder.Add salt and pinch of sugar to balance the taste.Add ghee and fry till oil leaves sides.Add 1 cup.water and cook on low flame covered or pressure cook 2 whistles.When done garnish with chopped coriander and roasted red chilli.
