- Prepare 400 gm mutton
- Make ready 1 tbsp ginger garlic paste
- Prepare 4 tomatoes

- Prepare 1/2 tsp turmeric powder
- Take 1/2 tsp cumin powder

- Take Salt accordingly
- Make ready 1 cup brown onion
- Make ready 1 green chilli
- Prepare 1/4 cup Coriander leaves
- Get 1 tbsp lemon juice
- Get 1/4 tsp orange food colour
- Get 1 tbsp kewra
- Make ready 1/2 cup oil
- Prepare 3 potatoes
- Prepare 2 tbsp ghee
Kolkata biryani is a huge favourite not only in Kolkata, but also outside. However, it wasn't introduced as an alternative to meat as is widely believed. Steps to make Mutton biryani:
- Heat oil.. add mutton along with g.g paste..
- Fry for a min.. Then add tomatoes (roughly cut)
- Cook till soft..
- Now gather all spices and add into Mutton..
- Bhounfy well till oil separate..
- Now add 2 cup water and cook till Mutton tender on low flame for an hour..
- Now add brown onion and cook for more 10min..
- Gravy is ready.. set a side..
- Soak rice for an hour..
- In a pot(in which you boil rice) add potaoes cut in 4 cube..
- Add water and salt according tu rice..
- When potatoes half cook and water boil.. add rice..
- Cook accordingly (1/3uncooked)
- Drain and set a side..
- ASSEMBLING: in a pot add gravy oil first and spread till grease all side well..
- Now add rice(half) and potatoes..
- Then add garvy and squeeze lemon juice on top of the gravy..
- Lastly add chopped green chilli and Coriander..
- Then cover with remaining rice and ghee on top of the rice..
- Tip: my mom use to add ghee it's give rice a shinny look and perfect cooked.. i do widout ghee but wo maza nai ata so ab ghee must ha🙂
- Now in a bowl add food coloir,kewra with a tbsp of water and pour on rice..
- Cover the lid and cook for 5,6 on high flame first
- Then pit on low flame for 15,20min..
- Serve with kashumbar and Enjoyyy..
