My recipe here is for vegetarians and my non-veg friends can substitute that with meat stock. Ghee is a must for this dish, cooking with just. The rice is quite similar to most of flavored rice items like Ghee rice. Instructions to make Ghee rice/ kuska rice/kuska biriyani:
  1. Wash rice with water 2 times and exceeding the water..keep aside atleast for 30 mins.
  2. Take a kadai or utensil for making rice which is good for dum. For cooking with dum technique we need a utensil which bottom is not thin, so sim/ slow cooking with lid do not stick to bottom.
  3. Put ghee and add bay leaf, caraway seeds, cloves, cinnamon, cardamoms, mice and wait untill spluttering.
  4. Add onions and cook low flame untill reach golden colour. Then add ginger and garlic paste, and cook untill raw smell of ginger and garlic goes away. Add pudina paste and pudina crushed and stir for 1 min.
  5. Add 4 cups water. When water starts boiling add rice, salt as per taste(check water for salt taste,if water is not salty then add more salt). Close the lid and seal the lid either with alluminium foil or cloths.
  6. Keep the flame to a low or sim and dum cook till the rice grains are tender and cooked. It will take about 7 to 8 minutes for the rice to cook. Do use a thick bottomed pan, so that the rice grains do not stick to the bottom of the pan. If you want you can check the rice grains once while cooking. If all the water has been absorbed and the rice grains do not look cooked, then add some hot water in the pan. Cover and continue to cook. Garnished with some mint leaves and served.
