However, layered chapati( chapati za ngozi) requires extra time, extra oil and simple skills. Kenyans love chapati because they are always a great accompaniment for tea, soup, stew and vegetables. To make soft layered chapati the Kenyan way, you need all purpose flour, water, salt, sugar and oil.
To begin with this recipe, we have to first prepare a few components. You can cook layered chapati using 5 ingredients and 18 steps. Here is how you can achieve it.
The ingredients needed to make Layered chapati:
- Take 1500 g sifted all purpose flour
- Take to taste Salt
- Prepare 4 tbsp Ghee Melted/ Vegetable Oil
- Prepare Warm Water for Kneading
- Prepare Ghee/ Vegetable Oil for Cooking
Chapati Recipe- The Secret to Soft Layered Chapatis. Chapati also known as roti is an unleavened flatbread and is made from mixing wheat flour with water along with other ingredients to form a dough. Many people consider cooking chapati a hard task but with mastery of the right skills, it can be the most interesting task. Steps to make Layered chapati:
- Step 1.1500 g/6 Cups sifted all purpose flour and Salt mix well.
- Step 2.Add 4 tbsp Melted Ghee/ Vegetable Oil. Mix well to make sure there are no lumps left.
- Step 3.Start adding warm water bit by bit while mixing. - Mix until the dough is formed. - The dough should be little bit sticky.
- Step 4. Add 1 tbsp of. Melted Ghee/ Vegetable Oil and Knead for a minute without putting too much pressure.
- Step 5. Put it in an oiled bowl and Cover with Lid/ plastic Cling Foil/Kitchen Towel…..Use what is available.
- Step 6. After 2 hrs the dough should be soft and ready for another steps.
- Step 7. (Optional) Knead again for 2-3 mins without putting too much pressure on it.
- Step 8. Cut into 13-17 equal small doughs and make them round.
- Step 9. Cover and leave them for 15-30 minutes.
- Step 10.Roll each dough and spread 1 tbsp Melted Ghee/ Vegetable Oil. At this point don't really care about the shape or thickness lol!! - Had some Melted Ghee/ Vegetable Oil.
- Step 11.Stretch it a bit to make some layers nice and thick. - Sprinkle some flour to make layer stay intact, make a hole and Roll it out hood then make a Coil.
- Step 12. Roll it into a Coil number Eight(8)shape. Then put one Coil on top of the other. Very simple!!
- Step 13. Place them in a plate of work surface. Let them stay for another 5-10 minutes.
- Step14. On a work surface, sprinkle some flour and start rolling your Coiled shape dough.
- Step15. Place the rolled out Chapati on a pan and Cook on medium heat for 1-2 Mins before flipping the other side. - Make sure your pen is not too hot and the way you pick it up your Chapati is the same way you are going to put it on a Pan.
- Step 16. Cook for another 1 Minute.
- Step 17. Add 1 tbsp Melted Ghee/ Vegetable Oil. Once the other side is done flip back onto Original side and Cook for another 20 Seconds.
- Step 18. Ready to serve with any Curry,Vegetables,Tea…….
Chapati Za Ngozi (Kenyan Soft-Layered Chapati) Recipe for Chapati Za Ngozi- an unleavened Kenyan flatbread filled with flaky soft layers and pan-fried until golden. Perfect for pairing with tea for a light breakfast or alongside stews. Flip the chapati every some minutes. With the help of the rolling pin, roll the chapati into small round shape. Apply few drops of oil and some wheat flour.
