Paruppu-Araichu (Usili) is a mixture of lentils and vegetables , that is usually made using green beans or cluster beans and sometimes using potatoes. Not many know or do this dish using pudalangai (snake gourd). #indiankitchen Paruppu usili is a south indian recipe which is a long process and delicious. Most of the people like this very much.

The ingredients needed to make Pudalangai Paruppu-Araichu(Usili) / Snake gourd(chichinda) and Lentil stir fry:
- Make ready 500 grams snake gourd chopped / pudalangai
- Prepare to taste salt
- Take 3 tbsps rice bran oil
- Take 1 tsp mustard seeds
- Prepare 1 pinch asafoetida
- Take 5 - 6 curry leaves
- Get 1 handfull coconut scrapings
- Get coriander leaves chopped
- Prepare 6 tbsps toor dal channa dal soaked and
- Take 1 chilly green
- Take 1 pinch turmeric powder
- Take 5 chillies dry red
- Get to taste salt
Pudalangai Poriyal is simple nutritional poriyal where cooked Pudalnagai (Snake Gourd) is sautéed with spices and finally garnished with coconut. Snake gourd recipe - Snake gourd is a vegetable used in Indian cuisine and goes by the name padawal in hindi, potlakaya in telugu and pudalangai in tamil. It is most commonly used to make stir fry, curry or added to curd chutney. Snake gourd has a very strong smell & tastes pretty bland.
Instructions to make Pudalangai Paruppu-Araichu(Usili) / Snake gourd(chichinda) and Lentil stir fry:
- Chop the snake gourd and soak toor dal and channa dal (3 tbsps each) in water for 30 minutes.
- Take a wok, on medium heat, add oil. Once the oil gets heated up add mustard seeds, asafoetida and curry leaves. Then add the chopped pudalangai / snake gourd and saute.
- Sprinkle little salt to this and mix. Allow this to cook on medium heat for about 10-12 minutes or until the the pudalangai becomes tender. Saute this in 1 minute intervals to avoid burning.
- Meanwhile, take the soaked channa dal and toor dal in a blender jar, add salt, 1 green chilly, turmeric powder and 5 dry red chillies. Grind this to a coarse paste (DO NOT ADD WATER WHILE GRINDING).
- Once the pudalangai / snake gourd is cooked,simmer the heat, take it out in a plate, leave the oil in the wok itself. Now add the ground paste to the wok and saute this for about 2 minutes or until the raw smell leaves.
- To this add the cooked pudalangai and mix them thoroughly. Switch off the heat.
- Garnish it with coconut scrapings and chopped coriander leaves. transfer this to a serving bowl and serve it hot.
Watch Queue Queue Boil the snake gourd - pudalangai until tender but firm. Make a paste of coconut, green chillies and cumin seeds. Heat a pan and add in the cooked snake gourd, the ground coconut paste and cooked toor dal. Let it simmer for a couple of minutes. Add in snake gourd and saute well.
