Add jaggery and tomatoes; continue cooking for three minutes. This soup was just SO different and so gorgeous. Instructions to make Prawn Soup:
  1. Deshell and devein Prawn. Clean Thoroughly with water. (Do not throw the shell). Season with Salt, Black Pepper and Chilli Flakes. Heat pan under a Medium heat. Once hot, pour 2 Tablespoons of Olive Oil. Cook Prawn once turn colour. Do not cook through. Let it rest on a kitchen towel.
  2. Prepare a medium pot. Heat up pot under a Medium heat, pour 2 Tablespoon Olive Oil. Once hot, sautee Onions and Garlic. Pour in the Prawn Shell in. Cook till the Prawn shell turns colour. Pour in Water. Once boiled, turn down the heat and let the stock simmer and reduce to abit.
  3. Off the heat, completely remove shell from stock. Once done, turn up the heat to medium and put in the Tom Yum paste in. Stir well and season it with Salt. Once boiled, put the Prawns in and let cook for about 2 minutes. Taste and add salt if needed. Last, adjust it with Cream to thicken and season with dry Dill. Ready to serve.
