Steps to make South Indian Platter….Idli Sambhar with Coconut Chutney.:
  1. First of all soak urad dal and boiled rice over night…then crush it in the mixie to make a better for idli..add necessary water in it.Also add 1 tsp curd and 1 tsp soda bicarbonate (Eno) in it…and stir it well…cover it properly and keep aside at least for 6 to 7 hours..for fermentation….
  2. Now better is ready for making idli..other side wash toor dal,chana dal and methi together in one container…Then boil it in the cooker with 3to 4 whistle.
  3. PREHeat idli cooker and pouring necessary water in it..other side take 1 tsp oil in a katori..heat it and add pinch of soda bio carb in it..also add 1 tsp water and add these to Idli better to make it soft and fluffy. Stir it well…
  4. With the idli stand prepare idli as shown in the picture. Add some black pepper powder on the top of each idli..while making it. Steam it in the cooker and prepare all idli..
  5. Let's prepare sambhar. For that took boiled mix dal and add 5 to 6 cup water in it.with the help of handy mixie bland it properly…
  6. Put the liquid dal on gas flame…add all masala one by one salt, turmeric, coriander and red chilli powder and stir it well.Add sambhar masala, lemon juice and tamarind pulp in the sambhar. Saute chopped onions and tomato with little oil and add it in sambhar. Also add boiled drumsticks in sambhar.
  7. It's time for tadka.Took some oil in katori and mustard seed…add whole red chilli, 1 tsp methi dana and pinch of asfoetida with 1 tsp red chilli powder..and make tadka…pour it into sambhar and stir it well…after that boil it for at least 15 to 20 minutes…at last add chopped coriander in it.Sambhar is ready to eat.
  8. For coconut chutney..took 100 gm coconut powder, 2 tbsp gram(spilted)1/2 cup mint leaves, 1 tbsp coriander leaves, some curry patta and 1 tbsp curd in a mixie jar and crush it..finely. add little water to it to make a fine paste. Add salt to taste..coconut chutney is ready for idli sambhar.

Just like the tomato, if adding ginger, grind it to a fine paste with the coconut. Increase or decrease the chilies you add according to taste for a hotter. This is a simple and delicious chutney which goes well with all south indian breakfast Stir in the salt and adjust the consistency of the sambar by adding more water if required and serve hot with the idlis or with rice.
