- Add red chilli powder,garam masala,salt,boiled Lobia,1/2 cup of water and mix it well. Cover with lid and cook for 5 min.
- Heat a kadai along with 1tsp,add gongura leaves,green chillies and fry for 2 min and make a fine paste.
- Heat a Kadai along with 3 tsp oil,add chopped onions and saute for 3-4 min.
- Add ginger garlic paste and saute for 2 min. Add brinjal pieces and saute for 3 min and cover with lid and cook for 5 min.
- Add gongura paste,mix it well and cook for 2 min.
Gongura means red sorrel leaves in Telugu. These leaves are the star of this recipe. Gongura chicken is a spicy and slightly sour tasting curry made Gongura chicken turns out best when the sourness from the leaves is well balanced in the dish. Each home and restaurant has their own trick to balance. This curry is easy to make and has sweet and sour flavors of tamarind and sugar!
