Instructions to make Amaranth Flour Pudding:
  1. Heat a saucepan on medium flame. Add milk, water and sugar. Stir and let it boil till sugar dissolves completely. Keep aside.
  2. Heat ghee in a pan on low medium flame. Once the ghee is hot add rajgira flour and roast it. Stir it continuously.
  3. Roast the flour for 5-8 minutes or till it gets brown in colour.
  4. Once flour is roasted nicely. Add in the milk and sugar mixture. Mix well immediately.
  5. Cover the pan with a lid and let it cook for 1-2 minutes or till all the moisture evaporates and ghee starts to ooze out from the sides.
  6. Add in the cardamom powder and chopped nuts. Mix well.
  7. Switch off the flame. Remove the pudding to a serving bowl. Garnish with some more chopped nuts and serve hot.

May I also add that I make it this way because the other flavors cover the general flavor of the amaranth. This recipe is an alternative, but it will not be like your normal cereal grains. I use this recipe with other grains: millet. Amaranth is a great alternative for gluten-free eaters. Combine the amaranth and water in a small saucepan, and bring to a boil.
