Instructions to make Lauretti:
  1. Spiralize the courgette and carrot. If you don't have a spiralizer use a peeler and shave into long strips.
  2. To make the sauce, crush 3-4 anchovies and a little of the oil with the garlic, olives, tomatoes and the dried chilli and cook for 2-3 minutes.
  3. Steam or drop the courgette and carrot in boiling water for 1 minute (cook too long and they will soak up too much water and become mushy).
  4. Drain the courgette and carrot, add the sauce, combine and serve adding a few shredded basil leaves.
