Saag paneer is a classic Indian dish of cooked spinach studded with cubes of fried paneer cheese. Thickened with cream or coconut milk, it's a hearty and filling vegetarian meal. Fry another minute or so, and then remove the paneer from the pan onto a plate.

The ingredients needed to make Saag paneer:
  1. Get 200 g paneer
  2. Prepare 1 onion
  3. Prepare 2 tablespoons curry paste of your choice

  5. Take 1/4 cauliflower
  6. Make ready 200 g spinach
  7. Take 50 g Yoghurt (optional)

Using a slotted spoon, transfer to a double layer of kitchen paper to drain. Saag just means greens in Hindi, and though spinach is usually used in the U. S., in India saag paneer is also made with mustard, collard, fenugreek, or beet greens, and even amaranth or purslane.

Steps to make Saag paneer:
  1. Fry the cashew nuts and set aside
  2. Cube and fry the paneer & set aside
  3. Boil the cauliflower florets for 4 minutes
  4. Fry the onion
  5. Add the curry paste and 100ml water
  6. Add the cauliflower and other veg of your choice. I added some mushrooms and red pepper. Simmer for 10 minutes
  7. Add the paneer, cashews and spinach. Simmer for 10 minutes. If a creamier taste is preferred add 50ml Greek yoghurt or creme fraiche.
  8. Serve with rice and naan bread

Saag paneer (my mom made it with mixed greens mustard/spinach/other greens) is a bit earthier. This was bright, tangy, and the briny feta just made this so delicious. Saag Paneer or Palak Paneer or Indian creamed spinach and paneer curry, no matter what I call it, it is a delicious and easy spinach and Indian cheese main course curry which I always order in one of my favorite Indian restaurant! The paneer cheese in this fast and easy dinner doesn't melt when it cooks. It browns instead, giving a toothsome texture to this Indian classic packed with spinach and spices.
