  2. Heat oil in a round bottom wok or a pot set to medium high heat until lightly smoking. Hold egg bowl about one foot above the pan and pour the egg mixture into the oil in one go.
  3. The egg mixture will puff up immediately. About 1 minute later flip the omelette. Cook the other side for another 1 minute. Removed omelette from the pan & serve immediately.
